Provencal minced beef with rice

Ingredients
- 300g rice
- 400g minced beef
- 2 onions
- 1 clove of garlic
- 2 tomatoes
- 1 pepper
- 2 courgettes
- 2 onions
- 1 clove of garlic
- 2 teaspoons of mixed herbs
- 1 tablespoon of olive oil
- Salt
- Pepper
Preparation
- Cook the rice as per the instructions on the packet.
- Carefully wash and finely dice the courgettes, the pepper and the tomatoes.
- In a frying pan, heat the oil and fry the thinly sliced onions and pepper.
- Then add the tomatoes, the courgettes and the chopped garlic.
- Cover and cook on a low heat for about 20 minutes.
- Add the meat. Season with salt and pepper and sprinkle with mixed herbs. Cook it all for another 10 minutes, making sure the meat is cooked through.
- Serve immediately on plates with the rice.
