Cream of cucumber and coconut soup

Ingredients

  • 1 cucumber
  • 20cL coconut milk
  • 1 teaspoon of fresh ginger
  • 8 ice cubes

Preparation

  1. Carefully wash the cucumber. Peel it and then cut it in half lengthwise. Remove the seeds using a spoon and then dice finely.
  2. Place the cucumber, coconut milk, ice cubes and the ginger in a blender and blend until you get a creamy, homogenous mixture. Serve immediately.
